Happiest of weekends to ya'll! Hope you're enjoying a fabulous & relaxing Saturday afternoon! A few favorites I've come across this week:

  • Loving this fall skirt by Maje, isn't it perfect for the cooler weather?
  • I had to share this article, because who would ever have thought that a Postman from Waco, Texas (my hometown) would be designing Hermes scarves, I had no idea!
  • As part of the All-Star Reunion Blowout week, Good Morning America's Rachel Smith talks with the cast of Clueless and looks back over the past 17 years since the hit movie's release. On that note, um, has it really been 17 years, oh my goodness-and even more importantly, why have we not figured out a way to create Cher's closet and outfit system in 17 years? I mean her closet was amazing!

HAPPY WEEKEND & COCKTAIL TIME!

Happy Friday! I hope ya'll have had a good week and have something fun planned for this weekend! I can't believe it is already July 4th almost.  It is very weird having the 4th fall on a Wednesday this year, so I'm sure there are plenty of people celebrating the holiday both this weekend and next and maybe for the lucky ones, all week long. You have to try ou the margarita & dip recipes and let me know what you think of them.  Both the margarita & Guadalajara sour recipes are the perfect refreshing choice for happy hour over the hot weekend! Would love to know your thoughts on the recipes and if you have any other favorite cocktails recipes to share, please do! Hope your weekend is fabulous! 

RECIPE LOVE

It's no secret that I think I could survive off of cheese and candy.  Yes I love both that much and would probably have my last meal be some sort of combination of the two. So when I came across a simple, delicious recipe for MINI mac & cheese pies, I was thrilled to find one of my favorite meals in miniature form.  Doesn't it seem like everything can be miniaturized these days, you name, they make it miniaturized.  These mini mac & cheese pies would be the perfect side dish for anything you grill out, steak, chicken, whatever you choose.  See the easy recipe below and let me know what you think of these mini mac & cheese pies.

CINCO DE MAYO

Hope ya'll had a fabulous weekend.  As I mentioned on Friday, Cinco de Mayo is this Saturday! You can guarantee this Texas girl LOVES to celebrate Cinco de Mayo, and couldn't be more excited about getting to spend this year's day in Austin, CAN'T. WAIT.  I hope ya'll have fun plans for the weekend, and it is not too late to throw together a fiesta for friends with the essentials and recipes mentioned below.

Margarita Cupcakes
(via Vegan Cupcakes Take Over the World)
1/4 cup lime juice
1 1/2 tsp lime zest (1 lime)
1 cup soy milk (plain or vanilla)
1/4 cup vegetable oil
2 tsp tequila
1/2 tsp vanilla extract
1 cup sugar
1 1/3 cup all purpose flour
1/4 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
Directions:
Preheat oven to 350F. Fill a 12-cup muffin tin with liners.
In a large bowl, mix together lime juice, lime zest, soy milk, oil , tequila, vanilla and sugar.
In a small bowl, mix together flour, baking soda, baking powder and salt. Add to lime mixture and stir until just combined. Divide evenly into muffin tins.
Bake for 20-24 minutes, until a tester comes out clean and the cakes spring back when lightly pressed. Turn out onto a wire rack to cool completely before frosting.

It's Friday and nothing like this video to get you ready for the weekend!  I had forgotten how much I absolutely love this scene from the movie Something Borrowed... AMAZING.

A few favorites I've come across this week:
  1. For those of you who didn't get their Margarita fix from the previous popsicle post, these Watermelon Basil Margaritas look amazing & delicious!
  2. This amazing article on the Huffington Post for all of us who are rapidly sliding into the big 3-0.  And the BOOK that came out earlier this week!
  3. Great thing to try out this weekend if you are wanting to take on a craft project.  These painted tumblers look pretty simple to make and are super cute.
  4.  Can't wait for the fabulous Clare Vivier's candy colored messenger bags to make their debut in stores soon.. in the meantime you can check out my favorite Clare Vivier bag, the messenger bag, on her website.

MARGARITA POPSICLES.

Cinco de Mayo is only EIGHT DAYS AWAY, yes, you read that right, it is one week from tomorrow.  That means you have only a few days to pull together a fun Mexican fiesta to celebrate the day! Not to worry, I have all the essentials for the perfect celebration, but you'll have to wait until Monday's roundup for that.  While I was looking for the perfect party ideas to celebrate Cinco de Mayo, I came across so many ways to create the perfect margarita and wanted to share the first of many margarita recipes, the margarita popsicle.  Even if it is not sunny and 90 degrees here in NYC this weekend, it doesn't mean you can't make a dozen of these popsicles sit outside and pretend you're basking in the sun enjoying the springtime weather.  Let me know what you think of them!

GRAPEFRUIT MARGARITAS

Ever since I returned home from Mexico I've been craving a good margarita, and sadly, they just don't seem to taste like the real deal I had on vacation (possibly because I'm not sitting on the beach while drinking the margaritas!).  I came across this recipe here the other day and it is DELICIOUS.  A perfect, fresh spring drink for a warm day! Now only if it would get back to the beautiful weather we had here in New York last week, then I would be good to go! In the meantime, I can sip these while imagining it is springtime outside:) .  Let me know what you think of them!
