CINCO DE MAYO

Hope ya'll had a fabulous weekend.  As I mentioned on Friday, Cinco de Mayo is this Saturday! You can guarantee this Texas girl LOVES to celebrate Cinco de Mayo, and couldn't be more excited about getting to spend this year's day in Austin, CAN'T. WAIT.  I hope ya'll have fun plans for the weekend, and it is not too late to throw together a fiesta for friends with the essentials and recipes mentioned below.

1/4 cup lime juice
1 1/2 tsp lime zest (1 lime)
1 cup soy milk (plain or vanilla)
1/4 cup vegetable oil
2 tsp tequila
1/2 tsp vanilla extract
1 cup sugar
1 1/3 cup all purpose flour
1/4 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
Directions:
Preheat oven to 350F. Fill a 12-cup muffin tin with liners.
In a large bowl, mix together lime juice, lime zest, soy milk, oil , tequila, vanilla and sugar.
In a small bowl, mix together flour, baking soda, baking powder and salt. Add to lime mixture and stir until just combined. Divide evenly into muffin tins.
Bake for 20-24 minutes, until a tester comes out clean and the cakes spring back when lightly pressed. Turn out onto a wire rack to cool completely before frosting.

GUANTANAMERA, TEQUILA, AND LOTS OF SUN!


My mom, sister-in-law Julia, and I returned home from 5 days in MEXICO last week and it was pretty wonderful. Anyone who knows me well knows that I LOVE Mexico, everything single thing about it is pretty FABULOUS.  My love of Mexico stems from growing up visiting this country for as long as I can remember (Hello, Texas and Mexico are literally next door neighbors!). We stayed at the Villa Rolandi and it was absolutely fabulous.  I would highly recommend anyone vacationing in Isla Mujeres to look into staying at Villa Rolandi.  Everything from the rooms to the service was wonderful and we would definitely go back to this quaint little island.   

I have to admit, for the past 20 plus years I have heard the song "Guantanamera" in all of its' many forms, the good, the bad and the ugly.  Somehow until  searching for a link to the song for this blog post, I had NO idea that the song was not called "wonton tomato" or some play on those words, yes I'm very serious! Wow, all these years and I finally figured out the real name of the song... learn something new everyday, right?  You can check out the song "Guantanamera" here.

I'm headed to MEXICO in less than two weeks and SO looking forward to basking in the sun and taking a break from this chilly weather here in NYC.  Just a few of my must-haves for a Mexican getaway, and did I mention I'm even more excited to over indulge in MEXICAN food while on vacay!
